  • Penokean Hills Farms sells sides and quarters of beef at a discount from regular retail pricing. How it works: Quarter orders are charged at $7.15/lb. The final price is based on the 'Hot Hanging Weight' of a carcass quarter. This is the weight of a quarter of beef after it has been dressed and hung at the abattoir. A typical Penokean quarter is about 200lbs-215lbs. You can request a smaller or larger quarter and we will do our best to accommodate. For any quarter order we first take a $500 deposit to secure your animal (payable online or by cash/credit/cheque in person). We then go through a customized cutting sheet with you to suit your specific needs and help give you the best overall value. All of our beef is hung for two weeks to age and then cut to your specs. Once complete, we will email you an invoice with the amount owing and deliver it to your home. You may also pick it up directly at our abattoir. By purchasing this product online, you are paying for the deposit to secure your order. Someone will be in touch with you to customize the order further.   • Has a reputation for being the most well marbled cut and delivers intense beef flavour and tenderness. Fast cooking and convenient. Simply season and cook by grilling, broiling or pan-frying. The king of beef cuts.

  • A small beast of a steak. The T-Bone contains two cuts in one - the Striploin and the Tenderloin. Great on the grill and because of its size its even better as a shared steak.
  • Considered to be the most tender cut of beef available and the most expensive. The tenderloin steak has very soft muscle fibres and typically a bit less muscle fat than other popular steaks. This makes it a great option for those who love a leaner cut of meat paired with a great level of tenderness.

  • This leaner steak is a great bang for your buck steak. A bit leaner but still great for searing and grilling. It contains a deeper flavour profile than the ribeye and striploin.
