Steaks

Most Penokean Hills Farms steaks are best when cooked on high and direct heat. We prefer to season our steaks with salt (sometimes pepper too) only, bringing out the natural flavours of the meat. Grill your steaks at 400F (or more). Cooking at high temperatures helps to add a nice crust on the outside of the steak, locking in the juices for a better eating experience. Once cooked to your desired level of doneness, finish them off with a very small bit of olive oil after they come off the grill. Let the steaks rest for 5-10min. This last step requires patience but also very important as it allows the juices to distribute back throughout the meat.

Roasts

Start by seasoning or marinating your roast as desired. Inserting cloves of garlic into the roast works great. For best results, sear your roast on all sides in a cast iron pan to help lock in the juices in the meat. Pre-heat your oven to a lower temperature and insert your roast in a covered roasting pan. Use a meat thermometer until you reach your desired level of doneness. A helpful tip is that with roasts, the slower you cook the meat, the more tender it will turn out. We like cooking at 225-250F until done to allow all the muscle fibres and collagen within the meat to break down.
