  • Have a heart - this cut is full of love and very underrated as muscle. Those who like it, love it.
  • The king of roasts for a lot of people. This is the same muscle as the ribeye steak but in roast form. Excellent in tenderness, flavour and juiciness.
  • With a 30lb roast box order, you will receive free shipping to your home (delivery range from Bruce Mines to Sault Ste. Marie and excluding St Joseph Island). Orders can also be picked up at our abattoir location. Each Roast Box Includes a variety of 3-4lb roasts including Cross Rib, Sirloin Tip, Inside Round, Outside Round, Eye of Round and Blade. Note that all cuts come individually vac-packed. While we do not guarantee any specific cuts, we do guarantee that the package will be good value for your purchase. Boxes may also be ordered anywhere in Ontario but requires us to get a quote on shipping fees involved.  
  • A small beast of a steak. The T-Bone contains two cuts in one - the Striploin and the Tenderloin. Great on the grill and because of its size its even better as a shared steak.
  • Our premium beef smokie has all the qualities of a great sausage. Smoked, juicy, flavourful and a great bite.
  • Penokean Hills Farms sells sides and quarters of beef at a discount from regular retail pricing. How it works: Side orders are charged at $6.95/lb. The final price is based on the 'Hot Hanging Weight' of a carcass quarter. This is the weight of a side of beef after it has been dressed and hung at the abattoir. A typical Penokean side is about 400lbs-450lbs. You can request a smaller or larger quarter and we will do our best to accommodate. For any side order we first take a $1,000 deposit to secure your animal (payable online or by cash/credit/cheque in person). We then go through a customized cutting sheet with you to suit your specific needs and help give you the best overall value. All of our beef is hung for two weeks to age and then cut to your specs. Once complete, we will email you an invoice with the amount owing and deliver it to your home. You may also pick it up directly at our abattoir. By purchasing this product online, you are paying for the deposit to secure your order. Someone will be in touch with you to customize the order further.   • Can also be known as an inside round or outside round roast. These roasts are typically much leaner and better suited to braising in stock or marinades. Slice thin for best results.

  • One of the leanest cuts of beef with the mildest flavour. To maximize the tenderness factor, cook to medium and let it rest for 15min prior to consumption. Carve across the grain in thin slices.

  • A miniature version of the tenderloin, this muscle looks like a pork tenderloin in shape and size. It packs a punch of flavour as it comes out of the chuck primal. There are only two of these pieces per animal.
  • Deep, rich beef flavour is the hallmark of short ribs. They contain a lot of marbling and are best braised or smoked for fall off the bone tenderness. Flanken ribs are thinly sliced a 8mm wide

  • This leaner steak is a great bang for your buck steak. A bit leaner but still great for searing and grilling. It contains a deeper flavour profile than the ribeye and striploin.
  • One of our favourite cuts at Penokean. Great versatile steak for breakfast, lunch or dinner. Rich in marbling and because its thin, it is very quick to grill on the BBQ.
